Moist Chocolate Muffins with Avocado
To nourish our kids, we moms love to prepare delicious yet nutritious foods for them. Snacks are on the go and most frequent food for them to munch whenever and where ever their little tummies feel hungry. This Monday, I baked classic Moist Chocolate Muffins this time with Avocado. We all know that Avocado is rich in Vitamin E and good for the skin. So why not blend this season tropical fruit Avocado to our chocolate muffins to give new twist and taste?

How to make Moist Chocolate Muffins with Avocado?
Dry Ingredients:
  • 4 cups All Purpose Flour
  • 2 cups Muscovado Sugar / Brown Sugar
  • 2 teaspoons Baking Soda
  • 1 cup Goya Unsweetened Cocoa Powder
  • 2 pcs Cage Free Eggs
  • 1 cup Hersheys Chocolate Chips
Wet Ingredients:
  • 1 cup Homemade Yogurt
  • 3/4 cup Coconut Oil
  • 1 cup Warm Water
  • 1 pc Avocado (peeled and w/o seed)

Steps:
  1. Preheat Turbo Broiler to 200 degrees C and line the muffin cups with muffin liner.
  2. Combine the Wet Ingredients on an electric blender or manually bet them to mix.
  3. On a bowl, mix the Dry Ingredients thoroughly then slowly pour over the mixed Wet Ingredients to it.
  4. Fill the prepared muffin cups 3/4 full and sprinkle with chocolate chips.
  5. Bake them in preheated Turbo Broiler for about 20 minutes or until an inserted toothpick into the center comes out clean.
  6. Cool down for about 10 minutes in the muffin cups before removing to cool completely on a wire rack.
