Chocolate Chip Crinkles

 Chocolate Chip Crinkles.

Monday maund day but not anymore my two kids and I did something fun in the kitchen, baking chocolate chip crinkles in our way. At first, my son sifted the flour, and then all the dry ingredients were mixed like baking soda, baking powder, brown sugar, and chocolate chips by her. While she's mixing, Rain did combining the wet ingredients and smashing the banana along with the butter, milk, and egg. It took less than 30 minutes to make the chocolate batter along with the arguments between these two little help of mine. Then Tinker portioned the batter into six circles to the parchment paper while I baked them for 20 minutes under 180 degrees Celsius. After an hour, we came up with 21 pieces of Chocolate Chip Crinkles which then later my husband and I enjoyed it over a cup of coffee in the afternoon while the kids paired it a glass of fresh milk. 

Chocolate Chip Crinkles Ingredients

Dry Ingredients:

3 cups all-purpose flour (sifted)
1 cup brown sugar
1 1/2 teaspoon baking soda
6 teaspoons baking powder
1/2 teaspoon iodized salt
1 1/2 cup Goya Chocolate Chips

Wet Ingredients:

2 cups fresh milk (Arla Low Fat)
1/2 cup melted butter (Magnolia)
1 pc egg
1 large size Banana (Lakatan)


Steps:

Mix all the dry ingredients in one bowl and so with the wet ingredients.
Then combine them to form the Chocolate Chip Crinkles batter
Portion a full spoon of batter to waxed paper
Bake them for 22 minutes in 180 degrees Celsius

Red Velvet Cake, Yah or Nay?

When it comes to family occasion, I'm the one who picks the cake normally. Whether it's my birthday or not, my hubby always asked me "Ikaw pili hon?" Sometimes, I feel awkward but I have to get used to it. This time, I'm not the only one who choose for my birthday cake. I got four allies at my back to push or negate my choice. So happy that they will help me in this little thing because "choosing" is very hard for me. I can't choose at that instant. It's better that I don't have anything than regret of having one that I don't find it's value after all. So among the cakes inside that clear glass, I'm thinking which of which but the Red one got my attention. Looks attractive, yummy and has full size just enough for the six cake eaters. Blueberry Cheesecake is my other bait but price is higher and the height is shorter than that of the Red Velvet Cake. Not to mention the taste, I'm pretty sure I'm loving the cheesecake among the others. Anyway, Red Velvet Cake (Php 850) is the winning cake for my birthday because our four kids had their all thumbs up for it aside from it's attractiveness and full size perfect fit for any occasion. Shortly, we had a full layer turned to 12 slices of Red Velvet Cake on our table at the restaurant across the Dessert Factory. 






Feeling Hot! Indulge yourself with Kuya J's Halo-Halo.

Everybody craves for a snow cold dessert on hot days. Summer is not yet over and temp is rising way too high on mid day. My kids at home go to fridge most of the time to get some ice cubes instead of water. I can feel it, you can feel it how hot these days. Looks like they're going to get inside the fridge just to be relieved from hotness. LOL! While looking at them, I was thinking the cold and yummy Halo-Halo dessert from Kuya J Restaurant. The ice cream texture of the crushed ice makes the Halo-Halo unique among the other Halo-Halo I've tested here in Cebu. The ingredients blended so well with the crushed ice making them a perfect pair. Sounds like you have to get another serve of Halo-Halo one after another. Halo-Halo pa more! =) It was one fine day on April where Nanay and Aunt Mila came to town and surprise us a visit. I am so thankful and blessed to have a energetic Grandma like her who came to see us at her age of 75 and still willing to go somewhere in the archaepelago. I am so challenged! I told myself that someday when I'm 75 I can still walk on my own and go where ever I want to go. Wishful thinking. My bro took us to Kuya J Restaurant inside SM Cebu. The place is cozy and peaceful with polite staffs who are always there whenever you need them. It is located somewhere at the mall entrance door where you can see the Radison Blue Hotel across the street. He ordered foods like liempo, pork sisig, pork sinigang, pancit canton, halo-halo for dessert, and ice cold tea to quench the thirst. Just enough food for us to eat on lunch. About few talks, the food we ordered came over the table  brought by the in house waiters. It only took few minutes I think around 10 - 15 minutes they served us with lavish yummy foods. We really enjoyed eating while having conversation and recalling old memories from the past. It was such a happy moment with Nanay. Aside from that, wonderful photos to save the lunch out moment were taken by their kind staff. Thank you Mister!

Apple Pie - Fruit Pie Dessert

If not in season, my kids love to eat fresh apple but when it's abundant they don't bother to get even a slice. Kids are always unpredictable when it comes to taste! Just being a mom, I have to find ways for them to eat nutritious snacks without spending too much on food rarity. When apples are everywhere, that's the time I have to make an apple pie. So I wanna share an easy apple pie recipe that I always do even though apple pie is an american classic dessert but all the ingredients like fresh apples and others are available just around the local grocery store. So there's no excuse why anyone or any mom can't do this nutritious fruit pie for the whole family. If you're that passionate mom, you can try this pie recipe with other season fruits around like buko (young coconut), langka (jackfruit) or mango. One key to have successful fruit pie is patience of kneading. I myself having a lot of sweats when it comes to kneading (masa). I do believe yummy food comes from hard labor. No wonder how desserts like cake recipes and pies are heavenly delightful! Just be patient and enjoy kneading! =)

Here's How To Make Apple Pie:
Ingredients:

Dough:
5 cups all-purpose flour
1/4 cup  
1/4 teaspoon fine salt                                       
2 cups butter/margarine 
1 large egg, lightly beaten
4 tablespoons or more cold water 

Filling:
2 pcs. Kalamansi ( freshly squeezed juice) 
4 pcs Pink Ladies Apples (best apples for pie)
4 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Directions:

 1. Prepare the Ingredients.

2. Make the Pie Crust. Grate the butter/margarine. Hand mix or use blender to mix the dough ingredients.

3. Form the dough into a ball, wrap in plastic 
wrap and refrigerate at least 30 mins - 1 hour.
4. Prepare the baking sheet or mini pie pan and
rolling pin for kneading (Masa).

5. How to knead dough? Just fold and
squeeze the dough many times.


6. Flatten dough to 1/8 inch thick disc then layer to
bottom and top side of pie plate with pie filling inside.

7. Make apple pie filling.

8. Mix apple pie filling ingredients.

9.  Preheat oven to 375 Degrees F. Then, bake apple pie on baking sheet until crust is golden for about 25 minutes. Brush top side of 
pie crust with lightly beaten egg or egg wash to have a nice golden brown pie crust.

10. Cool apple pie on a rack before serving. Apple pie keeps well at room temperature for 24 hours inside 
covered food container or refrigerated for up to 4 days. 









Healthy Banana Oat Muffin

Healthy Banana Oat Muffin with Cashew Nuts + Carrot Bits. 
As the week ended, I did some baking for the incoming week for my  little kids to munch during snack time. I put some twist to this Banana Oat Muffin recipe and that is adding some carrot bits and chopped cashew nuts. Using brown sugar and skimmed milk makes this dessert less fat and low calorie. So healthy for growing kids and for us adults watching our diet at bay.

    Healthy Banana Oat Muffin 

    Ingredients: 

    Dry
    6 cups Whole Grain Oats 
    3 cups All Purpose Flour 
    4 tsp Baking Soda 
    4 tsp Baking Powder 
    1 tsp Cinnamon Powder 
    1 tsp Nutmeg 
    1 tsp Salt 
    2 cups brown sugar 
    6 pcs Large Bananas (mashed) 1/2 slice medium size carrots (minced) 
    1/4 cup cashew nuts (chopped) 

     Wet 
    1 cup Skimmed Milk 
    1 cup Coconut Oil 
    4 pcs eggs

    Banana Oat Muffin + Black Coffee
    Directions: 

    1. Preheat oven to 200 Degrees Celsius. In my case, I'm using Turbo Broiler for baking this bunch of muffins. 
    2. Combine the dry and wet ingredients separately. After the ingredients are thoroughly combined, pour the wet mixture to the dry mixture to form a batter. Mix them well. 
    3. Pour the batter to muffin molds with muffin wax paper inside. Put them inside the Turbo Broiler for about 20-25 minutes under 200 Degrees Celsius. 
    4. Cool the baked muffins for about 10 minutes on the aluminum rack. Ready to serve. Makes 29 muffins using mold with diameter of 3".
