Cheesy Wheat Bread Sandwich



Somewhere in mid afternoon, we might grab something to eat or drink just to boost our energy for few hours left for the day. Here, I wanna share quick and yet healthy energy booster perfect for afternoon snacks for you and little ones with hungry tummies from school. Cheesy Wheat Bread Sandwich!  No tricky steps to follow, just spread the mayonnaise on one side wheat bread, sprinkle the grated cheese, and then put on top the other bread piece. Press the top gently and now ready to serve the Cheesy Wheat Bread Sandwich for everyone! Perfect with cold Four Season juice drinks. Happy Snacking!!!

Apple Pie - Fruit Pie Dessert

Apple Pie - Fruit Pie Dessert.
If not in season, my kids love to eat fresh apple but when it's abundant they don't bother to get even a slice. Kids are always unpredictable when it comes to taste! Just being a mom, I have to find ways for them to eat nutritious snacks without spending too much on food rarity. When apples are everywhere, that's the time I have to make an apple pie. So I wanna share an easy apple pie recipe that I always do even though apple pie is an american classic dessert but all the ingredients like fresh apples and others are available just around the local grocery store. So there's no excuse why anyone or any mom can't do this nutritious fruit pie for the whole family. If you're that passionate mom, you can try this pie recipe with other season fruits around like buko (young coconut), langka (jackfruit) or mango. One key to have successful fruit pie is patience of kneading. I myself having a lot of sweats when it comes to kneading (masa). I do believe yummy food comes from hard labor. No wonder how desserts like cake recipes and pies are heavenly delightful! Just be patient and enjoy kneading! =)

Here's How To Make Apple Pie:
Ingredients:

Dough:
5 cups all-purpose flour
1/4 cup  
1/4 teaspoon fine salt                                       
2 cups butter/margarine 
1 large egg, lightly beaten
4 tablespoons or more cold water 

Filling:
2 pcs. Kalamansi ( freshly squeezed juice) 
4 pcs Pink Ladies Apples (best apples for pie)
4 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Directions:

 1. Prepare the Ingredients.

2. Make the Pie Crust. Grate the butter/margarine. Hand mix or use blender to mix the dough ingredients.

3. Form the dough into a ball, wrap in plastic 
wrap and refrigerate at least 30 mins - 1 hour.
4. Prepare the baking sheet or mini pie pan and
rolling pin for kneading (Masa).

5. How to knead dough? Just fold and
squeeze the dough many times.


6. Flatten dough to 1/8 inch thick disc then layer to
bottom and top side of pie plate with pie filling inside.

7. Make apple pie filling.

8. Mix apple pie filling ingredients.

9.  Preheat oven to 375 Degrees F. Then, bake apple pie on baking sheet until crust is golden for about 25 minutes. Brush top side of 
pie crust with lightly beaten egg or egg wash to have a nice golden brown pie crust.

10. Cool apple pie on a rack before serving. Apple pie keeps well at room temperature for 24 hours inside 
covered food container or refrigerated for up to 4 days.

Fried Chicken, kids always love it! Crispy Pan Fried Chicken is a classic chicken recipe that moms can easily prepare over the weekdays especially on school days. So here I wanna share on how to fry chicken wings. Let's start with fried chicken seasoning, I only use ginger powder, white pepper, and Kalamansi juice. Best oil for frying chicken is no other than coconut oil, my only choice. Once the fried chicken is ready to eat, you can dip into soy sauce, chili and kalamansi juice mixture. But most kids like mine, they love to dip the crispy fried chicken to sweet tomato ketchup. Have enough time to prepare, you can try broasted chicken and southern chicken recipes.  Happy frying! =)

1. Clean the chicken wings.

One day, I've been to a wet private market to buy some sea foods. Right there, I found medium to large size squids for sale so I bought a half kilo of it. Oh how I love to eat sea foods! How about you? Squid (Pusit) is one of those yummy nutritious sea foods that I've always look for every time I go to Palengke (public market).  Here's a Pescetarian Diet idea that I love to share - Sauteed Squid with Pechay. This Pusit Recipe that I've made is a very easy to cook and yet very healthy for you. All you need is squid, spices (onion,garlic,tomato), pechay veggie, a spoonful of tomato sauce and coconut oil for sautéing. I prefer to use coconut oil because it's the healthiest among the existing oils. I've shared an article on JustMom Pinay FB  about coconut oil. Good to know it's a common oil here in our country so you don't have to spend too much just for cooking oil but has great impact to your entire health. I brought one of this meal during lunch time for my eldest daughter at school. I wrapped the dish with aluminum foil for the soup to be kept intact inside the food container. So that's it a must try Pescetarian Lunch Meal idea. Enjoy cooking!

1. Prepare the Ingredients.

3. Sautée (Gisa) the spices.

4. Pour 1 /2 cup water then add pechay stalks.

Breakfast Combo Meal - Tinolang Isda (Fish Soup)+ Fried Chicken Cheesedog + Papaya

Breakfast Combo Meal - Tinolang Isda + Fried Chicken Cheesedog + Papaya.
 Breakfast is the most important meal of the day. Your body needs all the nutrients for the whole day activity ahead so fuel it with nutritious foods. So here's my pinay mom's idea of breakfast,  Tinolang Isda + Fried Chicken Cheesedog + Papaya and of course the mixed brown rice. When it comes to morning food on weekend since I have enough time to prepare, I opt to have soupy healthy dish because my kids won't eat plain dry foods. So I am serving them with Tinolang Isda (Fish Soup), a traditional Pinoy main dish and fried chicken cheesedog because kids are always kids who like to eat hotdogs so instead of red hotdogs I prefer to give them chicken cheesedog. For skin nourishment, Papaya is my cheap and yet best source of Vitamin A, C, E. For us to get the energy we need for the whole day, I prefer to cook a mixture of white and organic brown rice. My ratio of mixing is 1/2:3 cups. Why I mixed them? Because white rice gives softness texture of the cooked rice while the organic brown rice is a good source of antioxidant and of course it gives color to your ordinary cooked rice. Sometimes, I use black rice instead of red rice to have a variation of my kan-on (cooked rice). 

Tinolang Isda (Fish Soup)



Ingredients
1 pc whole Fish (Bilong-Bilong, local name) 
1 stalk Lemon Grass (I picked it from my front mini garden =D ) 
1 pc Tomato                                       
1 pc Onion 
2 stalks of Malunggay

Direction:
Boil 2-3 cups water. While boiling, add the fish and spices. Let them cook for 5-8 minutes. As about to cook, put the Malunggay leaves then cover the pot for 1 minute. Now, it's ready to serve.

Camote Tops Sauté with Banana Greek Yogurt

This healthy Camote Tops Saute makes dinner light that can be done so quickly. It features traditional Pinoy flavors like soy sauce, sugar cane vinegar, tomato, onion, and garlic. Paired it with organic brown rice and Yogurt with sliced bananas. My eldest daughter always loves this classic Pinoy dish. Absolutely a vegan dinner idea!


Ingredients:

1/2 kilo Camote Tops 
1 large size Onion
1 pc Tomato
3 cloves Garlic
2 tbsp Soy Sauce
1 tbsp Coconut Oil
1/8 tsp Salt & dash of Pepper Powder

Directions:

Saute the spices (tomato, onion,garlic), then add the Camote Tops. Cook them for 3-5 minutes. Season to taste by adding salt and pepper.

One afternoon, a neighbor mom Dodz handed over me freshly harvested organic Broccoli from Mt. Kanlaon, Negros. So I made a Pork Broccoli Stir Fry - Saucy Style for lunch. It's so easy to make no fancy steps  to follow just common way of doing stir fry. For my kids to love the dish, I added tomato sauce mixed with cornstarch and water mixture to make it a little bit saucy. There you have it, my Pork Broccoli Stir Fry - Saucy Style healthy and super easy.
Ingredients:

1/4 kilo Pork Tenderloin (Pork Shop, Basak,Marigondon)
1 large size Broccoli
1 pc Tomato
3 cloves Garlic
1 pc Onion
1/8 cup Tomatoe Sauce
1/2 tbsp cornstarch mix with 2 tbsp water 1 1/2 cup pork broth
Directions:

1. Pressure cook the pork for 20 minutes to make them tender. Set aside 1 1/2 cup pork broth. Optional 
2. Saute the spices (tomato, onion,garlic), then add the pork and sliced broccoli. Cook them for 3-5 minutes. 
3. Add the tomato sauce, pork broth and cornstarch mixture, then season (salt, pepper or Magic Sarap) to taste. Let it simmer for a minute to incorporate all the ingredients.


Healthy Banana Oat Muffin

Healthy Banana Oat Muffin with Cashew Nuts + Carrot Bits. 
As the week ended, I did some baking for the incoming week for my  little kids to munch during snack time. I put some twist to this Banana Oat Muffin recipe and that is adding some carrot bits and chopped cashew nuts. Using brown sugar and skimmed milk makes this dessert less fat and low calorie. So healthy for growing kids and for us adults watching our diet at bay.

    Healthy Banana Oat Muffin 

    Ingredients: 

    Dry
    6 cups Whole Grain Oats 
    3 cups All Purpose Flour 
    4 tsp Baking Soda 
    4 tsp Baking Powder 
    1 tsp Cinnamon Powder 
    1 tsp Nutmeg 
    1 tsp Salt 
    2 cups brown sugar 
    6 pcs Large Bananas (mashed) 1/2 slice medium size carrots (minced) 
    1/4 cup cashew nuts (chopped) 

     Wet 
    1 cup Skimmed Milk 
    1 cup Coconut Oil 
    4 pcs eggs

    Banana Oat Muffin + Black Coffee
    Directions: 

    1. Preheat oven to 200 Degrees Celsius. In my case, I'm using Turbo Broiler for baking this bunch of muffins. 
    2. Combine the dry and wet ingredients separately. After the ingredients are thoroughly combined, pour the wet mixture to the dry mixture to form a batter. Mix them well. 
    3. Pour the batter to muffin molds with muffin wax paper inside. Put them inside the Turbo Broiler for about 20-25 minutes under 200 Degrees Celsius. 
    4. Cool the baked muffins for about 10 minutes on the aluminum rack. Ready to serve. Makes 29 muffins using mold with diameter of 3".
